Korea’s Paris Baguette cut backs egg-essential confectionary after bird flu

Paris Baguette, a leading bakery and patisserie brand of South Korea’s food giant SPC Group, has decided to suspend production of some pastries and baked sweets due to reduced egg supply amid the spread of highly pathogenic aviation influenza (AI) virus.

According to the bakery chain on Friday, it has decided to temporarily halt production of 19 confections that use egg as one of the main ingredients including sponge cake, muffin, and roll cake. It is the first time for a bakery in Korea to suspend manufacturing after the bird flu outbreak that first hit the country last month. Paris Baguette’s move as industry leader is expected to have an impact on other bakeries as well.

Industry sources note that SPC Group, which receives eggs from about 20 vendors had not had stable supply of the essential baking ingredient because of the largest-ever outbreak of the bird flu. An unnamed official from SPC Group that production scale-down is inevitable until supply conditions normalize. According to SPC Group, nine of 21 affiliated egg farms shut down, resulting in about 40 percent shortage in egg supplies. The food giant was under controversy recently for having pressured employees to secure eggs from small retailers to stockpile the ingredient.

Meanwhile, Tous les Jours, a bakery chain run by CJ Foodville Corp., said it has no immediate plans to suspend production but the possibility is open if supply conditions deteriorate. An official from CJ Foodville said that as of now, it isn’t in the situation to consider moderation in output.

The bakery has secured enough production supply until the end of this year but it may have to accommodate if the situation does not improve next month, the official added.
