CJ CheilJedang Corp., a leading food manufacturer in South Korea, said on Wednesday it signed a memorandum of understanding with Korean Edible Insect Laboratory Knowledge Coop (KEIL) to research and develop food using insects, which is expected to be the future of food. KEIL has made achievements in edible insect research and development and applied for a patent on edible insect food for the first time in Korea.
Currently, the edible insect market in Korea is estimated at only 9-10 billion won ($7.7-8.6 million) in value, but is growing fast as it has received spot light as the future food resource. Insects such as mealworms, grasshoppers, crickets and honey ants that are commonly used as food resources are known to be rich in protein, minerals and unsaturated fatty acids.
“The research on edible insects is still in its infancy, but is considered imperative in the future of food, and the company plans to lead study in various areas,” said Moon Byung-seok, head of food research and development institute at CJ CheilJedang. Ultimately, the company aims to develop edible insect food that people feel comfortable with while eating, added Moon.
